1. Chinese Stir-Fry Beef With Broccoli
Ingredients
- ½ pound or 225g of beef
- broccoli
For beef marinara sauce:
- 1 tsp soy sauce
- 1 tsp cornstarch
- 1 tbsp rice wine
- 1 tbsp black pepper
For the broccoli:
- 1 tsp soy sauce
- 1 tsp cornstarch
- 1 tbsp oyster sauce
- 1 tbsp sugar
For frying:
- 2 cloves of garlic
- ginger
- 1 cup of water
- 1 tsp salt
- 2 tbsp of canola oil
- 1 tbsp sesame oil
Instructions
Step 1 – Prepare the meat
Trim any big chunks of fat and cut the beef into 2 inch (5cm) thick slices.
Step 2 – Marinara
In a bowl mix in the marinara ingredients – soy sauce, rice wine, cornstarch and black pepper. Add the beef slices and leave in the fridge for 1 hour.
Step 3 – For the broccoli
In a different bowl create a sauce in which we will be cooking the broccoli and after that the meat. Combine the soy and oyster sauces with the sugar, black pepper and cornstarch. Whisk until homogeneous.
Finely chop two cloves of garlic and some ginger – set aside for now. Prepare a deep bowl with ice and set it on the counter, near the stove.
Step 4 – Blanch the broccoli and fry the beef
Heat the wok to a high temperature. Add 1 cup of salted water and bring it to a boil. Get the pre-cut broccoli and blanch them for 1-2 minutes. Quickly remove them and put them in the bowl with ice so we can freeze the process of cooking.
This will leave the broccoli slightly crunchy, but not raw.
Remove the water from the wok and let it get to a high temperature again. Add the minced garlic and ginger, stir until you sense their aromas and they start crisping up on the edges.
Now is the time to add the sauce you prepared for frying. Mix it up with the garlic and ginger and add the marinated beef slices.
Tip: The pan should be set on high temperature at all times – we do not want to boil the beef, we want to fry them, so the sauce must evaporate and the sugar has to caramelize the meat.
After 3-4 minutes of cooking, remove the pan from the heat and add the broccoli. Stir off the heat for 1 minute and then back on the heat for another 1.
Step 5 – Final touch-ups
Serve over basmati rice and top with a poached egg!
Tip: If you like your dishes spicier, we recommend to add 2 chopped chilly peppers while cooking the garlic and ginger – just make sure to remove the seeds, otherwise you will end up breathing fire!
A good way to remove the seeds is to roll the pepper gently between your palms.
Our next recipe is perfect if you will be having some guests over – we can guarantee you can feed a lot of people with it and they will be delighted by how amazing the food is!
2. Stir-Fried Beef And Baked Broccoli With Cheese
Ingredients
- 1 pound or 450 g beef
- broccoli
For the baked broccoli:
- 150 ml or 5 oz of heavy cream
- mozzarella
- gruyere cheese
- parmesan
- chilli powder
For the beef frying:
- 25 g unsalted butter
- canola oil
- 1 garlic clove
- rosemary
- 15-20 cherry tomatoes
Instructions
Step 1 – Bake the broccoli with the cheese
Wash and cut the broccoli. Put them in a casserole with the heavy cream and mix in the chilli flakes. Grate the gruyere, mozzarella and parmesan on top.
Bake at 375°F or 190°C for 15 minutes.
Step 2 – Prepare and cook the meat
Remove any excess fat and cut into 2 inch or 5 cm pieces. Heat your pan and add the butter and olive oil. Drop in the garlic clove and the rosemary, stir for 1 minute off the heat to extract their aromas.
Add the cherry tomatoes and cook until they start to soften and the skin bursts on one side. Season with salt and pepper. At that point, they are ready to go out. Place them in a bowl and put the wok back on the heat.
If needed add more butter or canola oil and once those are heated up, drop the meat slices in – cook until golden brown; 30 seconds before you remove everything from the pan, stir the tomatoes with the beef.
Turn off the stove and place the pan on the counter. Let everything rest for 5-10 minutes.
Step 3 – Final touche
By the time you have prepared the meat, your broccoli should be ready. Plate a piece of the broccoli with cheese and put some slices of meat on the side.
Tip: For sauce, we recommend bechamel.
We hope you are enjoying our recipes so far! The last one we have prepared is for people who love combining different tastes – it has everything you need, a little bit of spice, something sweet and sour for a contrast and a savoury note!
3. Tropical Stir-Fry Beef With Broccoli Salad
Ingredients
- ½ pound or 225 g beef
- 1 pineapple
- 1 white onion
For the marinara:
- 1 tsp light soy sauce
- 1 tsp sesame oil
- 1 tbsp vinegar
- 1 tsp cornstarch
For the frying sauce:
- the zest of 1 orange
- 1 tsp vinegar or lime juice
- 1 tsp pineapple juice
- 1 tbsp bbq sauce
- 1 tsp maple syrup or brown sugar
- 1 tbsp soy sauce
- 1-2 garlic cloves
- 1-2 tbsp chilli flakes
- 1 tbsp ginger paste or powder
- 1 and ½ tsp cornstarch
- 2 tsp canola oil
For roasting the broccoli:
- 1-2 tsp olive oil
- 1 tbsp salt
- 1 tbsp black pepper
For the salad dressing:
- 2 tsp olive oil
- 2 tbsp balsamic vinegar
- 2 tbsp honey
- 1 tbsp salt
- 1 tbsp paprika
Veggies for the salad:
- broccoli
- kale
Instructions
Step 1 – Prepare the meat, pineapple and onion
Cut any fat excess and slice the beef into 2 inch or 5 cm slices.
Grab the pineapple – peel and core it, slice it to 1 inch small enough pieces (about 1 inch or 3 cm), then do the same with the onion.
Set everything aside for now.
Step 2 – The marinara
In a bowl combine all needed ingredients for the marinara and whisk until homogeneous. Put the beef, pineapple and onion slices in and let it rest in the fridge for 1 hour.
Step 3 – The frying sauce
Turn on your stove and set it on high. Put the wok on and wait. Meanwhile, in another bowl prepare the sauce with all the necessary ingredients. The garlic cloves can be minced for more flavour and aroma, or can be fried whole. If you have fresh ginger, grate it into a paste, if not – you can use powder.
Step 4 – Frying
Remove everything from the fridge. By now the pan should be heated up well – put the frying sauce in and stir for 15-20 seconds. Now we can move to frying. Put the onions first, cook them for 1 minute and then add the pineapple slices. Stir for another 1 minute and add the beef.
When the beef is golden brown, you can remove the wok from the heat.
Step 5 – Roasting the broccoli
Now that the meat is resting, it is time to roast your broccoli. Wash them well and cut them into smaller pieces. Place them on a metal tray and drizzle the olive oil on top. Season with salt and pepper.
Roast for 15-20 minutes at 392°F or 200°C.
Step 6 – The salad dressing
While the broccoli is roasting, we have time to prepare the dressing for our salad. Grab a bowl and add all the necessary ingredients, whisk until combined and taste.
Step 7 – Assembling the salad
Wash the kale and chop it into larger pieces. Check the broccoli – it should be ready. Carefully put everything in a salad dish – the broccoli, kale and pour the dressing on top. Give it a good stir or two and serve with the fried beef!
