Everyone who loves easy and comfort food would enjoy eating quiche. This delicious meal comes from Germany and as some of you may guess, it has been invented as a leftover dish. Instead of throwing away what has left from the bread dough, they decided to put it into good use – combining it with some bacon, eggs and heavy cream, the quiche was born!
We love this meal because we can incorporate a lot of ingredients in it, which otherwise cannot form a complete dish on their own. It is a great way to clean your fridge from different leftovers and turn them into a delicious dinner!
Most people who work on tight schedules during the day, do not want to waste too much time with preparing fancy dishes, instead, they can check simple recipes for quiche and cook great food with less time and ingredients!
We have prepared for you three simple recipes for quiche and we hope you will enjoy them as much as we do!
But before we move to our simple quiche recipes, we feel obliged to show you the classic version on how to make a good quiche!
You will need:
- 250 g of all purpose flour
- 125 g butter
- 3 eggs
- 1 pinch of salt
- 200-250 ml of heavy cream
- 50-100 g cheese
How to do it:
Make the dough by combining the sifted flour, the grated cold butter, 1 egg and salt. Let it cool for half an hour in the fridge and then roll it out. Transfer to a tray or casserole and make sure it is well covered.
For filing, you can choose whatever you have in your fridge and before we bake it we have to cover it with the sauce. Combine 2 eggs with the heavy cream and grated cheese for it. Bake at 392˚F or 200˚C for 30 minutes.
Now that we know how to prepare the classic quiche, let us move to our first special, yet simple recipe!
1. Quiche Loren
You will need:
For the dough:
- 250 g all purpose flour
- 125 g butter
- 1 egg
- 1 pinch of salt
For the filling:
- 250 g of bacon
- ½ tbsp of butter
- 3 eggs
- 200 ml heavy cream
- 200 g grated parmesan
- pinch of grated nutmeg
How to do it:
Step 1 – The dough:
Prepare the dough with the flour, butter, egg and salt. Cover it with plastic foil and let it sit in the fridge for 1 hour to chill.
Step 2 – The filling:
Dice the bacon and blanch it for 3 minutes in boiling water. Drain it after that. Get a pan and melt the butter on high temperature, fry the bacon in it for 5 minutes.
In a bowl mix the eggs, nutmeg, cheese and heavy cream – you can add a pinch of salt and pepper if you would like to.
Step 3 – Assembling and baking:
Preheat the oven to 392˚F or 200˚C. Meanwhile, get the chilled dough from the fridge and roll it out. Transfer into a casserole. Bake for 15 minutes and then let it chill for 5-10 minutes. Now is the tile to add the filling and top with the creamy sauce.
Bake for 30 more minutes.
2. Quiche With Spinach
You will need:
For the dough:
- 250 g all purpose flour
- 125 g butter
- 1 egg
- 1 pinch of salt
- 3 tbsp of white wine, dry
For the filling:
- 800 g of spinach
- 150 g feta cheese
- 2 onions
- 3 cloves of garlic
- 1 tbsp of olive oil
- 50 g of olives without the stones
- 2 eggs
- 100 ml milk
- pinch of salt
- 1 tsp of black pepper
- 1 tbsp of nutmeg
How to do it:
Step 1 – The dough:
Prepare the dough with the flour, egg, salt, wine and butter. Chill it in the fridge, wrapped in plastic foil for 30 minutes.
Step 2 – The filling:
Wash the spinach and blanch it for 1-2 minutes in boiling water. After that place it into a bowl with ice and cold water for another minute and finally drain it.
Dice the onion and mince the garlic. Melt the butter in a skillet and add the onion, cook, until the onion is translucent. Add the garlic, spinach and feta cheese. Stir and season with salt, pepper and nutmeg.
Meanwhile this is cooking, you can grate the parmesan and prepare the sauce while adding the eggs and milk to it. Mix everything in a bowl.
Step 3 – Assembling and baking:
Preheat the oven to 392˚F or 200˚C. Roll out the chill dough and transfer to a tray. You can poke some holes in it with a fork. Bake for 15 minutes, then get it out and add the filling and the sauce.
Finish in the oven for another 30 minutes.
3. Quiche with carrots and leek
You will need:
For the dough:
- 250 g all purpose flour
- 125 g butter
- 1 egg
- 1 pinch of salt
- 3 tbsp of white wine, dry
For the filling:
- 400g of carrots
- 400g of leek
- 2 tbsp of olive oil
- 150 g of parmesan or cheddar cheese
- 100 ml of heavy cream
- 2 eggs
How to do it:
Step 1 – The dough:
Just like with the previous recipes, we are starting with the dough as it needs time to chill in the fridge so we can handle it easier. Once prepared, cover it with plastic foil again so it does not absorb any unpleasant scents from the fridge.
Step 2 – The filling:
Wash and clean the veggies, peel the carrots if you would like to, then cut them into juliennes.
Heat up the oil in the pan and add the veggies. Stir and cook for about 8-10 minutes until they begin to soften, then you can season with salt and pepper.
Preheat your oven to 392˚F or 200˚C and meanwhile prepare your sauce by mixing the heavy cream, grated cheese and eggs in a bowl.
Step 3 – Assembling and baking:
Roll out the cold dough and transfer to a tray, bake like this with no filling to 15 minutes then get it out and let it cool for 5-10 minutes. This is an important step, otherwise the filling will leak out from the soft dough. Now is time to add the veggies and the sauce on top.
Bake for half an hour more.
