Simple Recipes for Noodles

Unlike Italian pasta, noodles are divided into types primarily not in form, but content. Rice, egg, buckwheat, wheat noodles from Japan, Thailand, China and Vietnam, as a rule, cook much faster than durum wheat Italian and are most often fried in a pan with sauces and dressings.

Egg Noodles

Delicious egg noodles can be cooked at home without any problems. They consist of simple products that can usually be found in every home.

To prepare the egg noodles pour 7 oz or 200 g of flour into a cup, in the middle of it make a hole. In a separate bowl, break two eggs, add a pinch of salt, mix well and add the mixture to the flour.

Knead a cool dough, it will take about 15 minutes. Wrap the dough in a film and leave for 25 minutes. Then mix the mass repeatedly to make it elastic. Divide the dough into two parts. Roll out into two thin layers, approximately 1 millimeter thick. Put circles of dough on kitchen napkins and allow them to dry for 35-45 minutes. It is not recommended to dry the dough in a draft.

Once the edges of the dough are slightly dried, each layer of dough is folded in half, sprinkled lightly with flour, then folded in half again. Sprinkle a little flour and fold in half one more time to make a multilayer triangle. Now cut the noodles with a sharp knife, moving from edge to corner. Udon Noodles with Chicken

Ingredients

  • 2 chicken egg
  • 2 us fl oz or 60 ml of sesame oil
  • 2 tablespoons of soy sauce
  • 1.7 us fl oz (50 ml) of rice vinegar
  • 1 tablespoon of cane sugar
  • 1 chili pepper
  • 1 red onion

Instructions

To start cooking according to this simple recipe for noodles, make hard-boiled eggs, and boil the noodles to al dente then rinse with cold water.

In a preheated wok pan, fry the onion sliced in half rings in sesame oil. Add soy sauce, vinegar, sugar and simmer the sauce for about a minute over low heat. Shell eggs and cut into cubes. Bean curd also cut into cubes.

Transfer the washed noodles into a pan and mix thoroughly with the sauce. Then pour into the pan all the other prepared ingredients: eggs, cottage cheese and chopped chili peppers. Mix everything again, turn off the heat and let the noodles brew for a minute under the lid.

Boil the noodles in salted water until fully cooked. While the noodles are cooking, heat a small amount of olive oil in a saucepan over medium heat. Add finely chopped onions and fry until soft and golden in about 3 minutes. Then add the ham, cut into small pieces, and sauté for another minute. Add the cooked noodles, salt, and pepper to taste.

Sprinkle the dish with cheese, grill and let the cheese brown.

Japanese Noodle Soup

This is a simplified version of Japanese soup, consisting of ingredients that are always at hand: 10.14 us fl oz (300 ml) chicken stock, 2.8 oz or 80 g soba noodles, 1 chicken egg, 7 oz or 200 g chicken fillet, 2 tablespoons soy sauce, 2 stalks of wild garlic, salt, ground black pepper, sesame, and red chili peppers.
