As it is known, Europeans learned how to make ice cream thanks to Marco Polo. And the modern composition of ice cream with milk and sugar was invented in the Parisian Tortoni cafe at the end of the 18th century. In the days of Kievan Rus, a cold dessert based on finely sliced frozen milk was served at home.
To make this dessert at home is not so difficult. Homemade ice cream is tastier at times, it is an excellent delicacy that is equally liked by adults and children.
Almost all homemade simple recipes for ice cream, contain a dairy base in their list of ingredients: milk, cream, yogurt, cottage cheese. There are exceptions, of course, these are sorbets and other dairy-free options. But fruits and berries present in almost every recipe.
Blackberry Creamy Ice Cream
If you are ready to start, you will need the following ingredients to prepare this amazing dessert:
- 200 g fresh blackberry
- 100 ml 33% cream
- 100 ml pasteurized milk
- 1 egg yolk
- 80 g sugar
- 1 sprig of mint
If the milk is not pasteurized, boil it in advance and then cool it. Separate the yolk from the protein, beat it with sugar. Put on the stove on low heat, continuing to whisk, pour in a thin stream of milk.
The mass will increase in volume by more than 5 times and thicken. Remove the milk-egg cream for ice cream from the heat and cool it. Place the blackberries in a blender bowl and grind them until smooth. Whip the cream with a blender to steady peaks. Gently combine the cooled mass, blackberry puree, and whipped cream.
Transfer the blackberry ice cream to the food container, close the lid tightly and place it in the freezer. Freeze the product for 3 hours, taking out and stirring all the ingredients with a spoon every hour so that they do not seize in a single piece. After 3 hours, you will get a loose consistency of melted ice cream.
Serve the blackberry creamy ice cream in a chilled bowl, garnished with fresh berries and mint.
Healthy Banana Ice Cream
Of course, the easiest way to make delicious homemade ice cream is to use an electric ice cream maker. However, if you want to do everything yourself from start to finish, this simple recipe for ice cream is right for you.
You will need 2 bananas, 3.5 oz (100 g) of natural yogurt and ground cinnamon pinch. Cut ripe bananas into small pieces and put them in the freezer for several hours.
Take out frozen banana slices, put in a blender with cinnamon and yogurt. Add remaining ingredients are vanilla extract, nuts, honey and beat the mass. It is necessary to calculate the volume of liquid components so that, according to the consistency, the mixture turns out to be like slightly melted ice cream.
Chocolate Orange Ice Cream
To prepare this dessert, take 1 avocado, 3 tablespoons of cocoa powder, 1 orange, 50 g of chocolate containing at least 70% cocoa, 3 tablespoons of honey.
Remove the zest and then squeeze the juice from one orange. Peel the avocado and cut it into large pieces. Place avocado, zest and orange juice, honey, cocoa powder into a blender. Grind until smooth. Stir the pieces of dark chocolate into the mass and put it in the freezer for 7-10 hours.
Avocados must be ripe. Mix the ice cream in the container every hour.
Raspberry Yogurt Ice Cream
The list of ingredients for making this dessert is very simple:
- 6 cups of raspberries
- 0.3 cups of sugar
- 2 tablespoons lemon juice
- 1 cup of natural yogurt
Grind raspberries with lemon juice until smoothie in a blender, strain through a sieve. Add sugar and yogurt and mix well. Pour the mass into an ice cream maker or container, close and send it to the freezer until it freezes, stirring every hour.
Vanilla Ice Cream
Using this versatile and simple recipe for ice cream, you can add any berries or fruits to the finished dessert, as well as serve it without additives.
To make homemade ice cream, take 8.5 us fl oz (250 ml) of milk, 8.5 us fl oz or 250 ml of 35% cream, 6 egg yolks, 3.5 oz or 100 g of sugar, 1 teaspoon of vanilla extract or vanilla sugar.
Pour milk into a medium saucepan and bring to a boil, then remove from heat and cool to body temperature. Next, add sugar and vanillin to the egg yolks and grind it well with an immersion blender, mixer or fork. Continuously stirring the mass with a whisk, pour milk slowly into it.
Put the egg-milk mixture on low heat and heat it, constantly stirring with a wooden spoon, until the mixture thickens a little.
The readiness of the mass can be found by running a finger on the back of the spoon – if a trace remains of the finger, the mixture is ready.
Cool the finished mass, and then put it in the refrigerator (the mixture will cool faster if you put it first in a sink with cold water or on ice).
Pour cream into a large bowl and beat intensely until soft ridges form. Add the whipped cream to the chilled mixture and mix. Transfer the resulting mixture into a plastic container, cover with a lid or cling film and put it in the freezer for 50-60 minutes.
Once the mixture begins to harden, remove the container from the freezer and beat intensely the ice cream with the best hand mixer or a hand blender (whipping helps break up the ice crystals and makes the ice cream structure smooth and uniform).
Put in the freezer for another 50 minutes, then beat again. Transfer the whipped mass to a container, cover and put in the freezer for another 2-3 hours. Before serving, remove the ice cream from the freezer and place it in the refrigerator for 20 minutes.
For serving, you can arrange the ice cream in a bowl and sprinkle with fresh or canned berries, fruits, chopped nuts, crumbled cookies or grated chocolate.
