How to Make Instant Pot Broccoli Cheese Soup

Follow the following steps to make your own instant pot broccoli cheese soup.

  1. Add the ingredients into pot:
    1. 4 cups broccoli cuts
    2. 1 chopped onion
    3. ¼ cup chopped carrots
  2. Include seasonings:
    1. 1 teaspoon nutmeg
    2. 1 teaspoon hot sauce
  3. The main ingredient is broccoli, but you may add extra vegetables such as:
    1. lettuce
    2. cabbage
    3. beans 
  4. Variety of spices can make your soup unique; ginger, basil, bay leaves and cayenne.  Don’t be afraid to experiment.
  5. Add 3 cups of water or chicken broth.  Corn starch, flour, and old bread are also great thickeners. Dissolve in a small amount of lukewarm water before adding into.
  6. Add salt if you think the cheese you’re going to use doesn’t have enough. Salt is one of the most abused seasoning so add as little as possible.
  7. Cover the pot, lock the lid, and set the valve to “sealing.”
  8. Press the “pressure cook” button and set the timer to 3 minutes.  It will beep after a few seconds showing “ON.”  Then it’s all set.
  9. After cooking, the display will show a count up timer. Wait for a minute, then set the valve to “venting.” 
  10. Remove the cover and add 1 cup of cream for thicker soup or 1 cup of milk for thinner viscosity.
  11. Finally, add  2 cups of shredded cheese. Choose whatever type of cheese you like, such as Mozzarella, Parmesan, and Cheddar.

I Have no Instant Pot and I Don’t Want to Buy One. Can I Still Make Broccoli Cheese Soup?

Yes! Go for the traditional way if you don’t have an instant pot.

  1. Get a common heavy pot instead.
  2. Put in the ingredients:
    1. 4 cups broccoli
    2. 1 chopped onion
    3. ¼ cup chopped carrots 
  3. Add seasonings:
    1. 1 teaspoon nutmeg
    2. 1 teaspoon hot sauce
  4. Add 3 cups of water or chicken broth.
  5. Bring the mix to a slow boil until the broccoli and carrots are tender.  Please don’t overdo it. Else, broccoli will become soggy.
  6. Remove from heat and add 1 cup of milk or 1 cup of cream for thicker soup.
  7. Finally, add 2 cups of shredded cheese.

Can I Make Instant Pot Broccoli Potato Cheese Soup?

Absolutely! You have two ways to make instant pot broccoli potato cheese soup.  

Firstly, Boil the potato in a separate pot. Remove the peels. Mash. Then add to broccoli cheese soup to thicken.

Secondly, Peel the potatoes. Make uniform slices or small cubes. Add to the recipe together with the broccoli.

Cooking broccoli soup with no cheese is completely on preference. Broccoli soup with cheese is great but it can be great too without the cheese. It’s dependent on your taste buds and how you play with ingredients.

Broccoli cheese soup has relatively low carbs which mostly come from starch serving as thickener.  If it comes with bread, the carbs are obviously from the bread.

Old bread can also be used as thickener, thus contributing to carb content.
