Pasta can be so versatile, there are dozens of ways one can prepare it and it is so delicious all the times! But have you thought what is the difference between pasta and egg noodles? The base is the same flour and eggs, but as the name suggests – these noodles are cooked with more eggs.

They are more nutritious and high in carbs and protein than the regular pasta, which means that they can be transformed into a wonderful meal for dinner and they are also just as tasty as every other type of pasta!

Some people like them boiled, other people like them in a cold salad, most people, however, love them stir-fried and this is exactly what we will be talking about today! We are ready to share with you our top three ways on how to cook stir fry egg noodles!

1. Stir-Fried Egg Noodles With A Veggie Mix

You will need:

  • 1.5 L of water
  • 1 tsp of salt
  • 1 package of noodles
  • 3 tbsp of olive oil
  • 1 green chilli
  • 2 garlic cloves
  • 1 small onion
  • ½ cup of cabbage
  • ½ cup of spring onion
  • ½ cup of carrots
  • ½ cup of green bell pepper
  • 1 tsp of white vinegar
  • 2 tbsp of dark soy sauce
  • 1 tbsp of chilli sauce
  • 1 tbsp of ketchup
  • 1 tsp of honey
  • 1 tsp of black pepper

How to do it:

Step 1 – The noodles:

Bring the water to a boil in a pot and add 1 tsp of salt. Put the noodles in and boil for 2-3 minutes on medium-high. When they are almost cooked, turn off the heat and drain them from the hot water. Place aside for now.

Step 2 – The veggies:

Heat up your pan on high with the olive oil. Chop the green chilli pepper and the onion, mince the garlic and add them all in the pan. Cook and stir for 30 seconds, after that, add the chopped green pepper and the carrots.

Stir for 1-2 minutes and add the cabbage and the green parts of the spring onion. When you see that the cabbage is getting soft you can add the vinegar, soy and chilli sauce, ketchup and honey. Season with pepper and salt if needed and stir.

Add the drained noodles, toss them for 1 minute with the veggies and the sauce, this will cook them fully. Finally, add the green parts of the spring onion.

Serve hot with some cilantro on top!

2. Drunken Stir Fry Egg Noodles

You will need:

  • 1 package of noodles

For the marinara:

  • 250 g of bacon
  • 1 tsp of fish sauce
  • 2 tsp of white pepper
  • 1 garlic clove

For the sauce:

  • 2 tbsp of oyster sauce
  • 1 tbsp of fish sauce
  • 1 tbsp of light soy sauce
  • 1 tsp of dark soy sauce
  • 2 tbsp of maple syrup
  • 1 tsp of white pepper

For the veggies:

  • 8-10 garlic cloves
  • 4 red chilli peppers
  • 1 small red onion
  • 150 g of bok choy
  • 10 fresh basil leaves
  • 2 tbsp of olive oil

How to do it:

Step 1 – The Noodles and marinara:

Get your sliced bacon into a bowl and add the fish sauce, smashed garlic and white pepper. Let it sit while we are preparing everything else. Boil your noodles and when almost ready remove from the heat and drain immediately from the water.

Step 2 – The sauce:

In a larger bowl mix all ingredients for the sauce – oyster, fish, light and dark soy sauce, maple syrup and season with white or black pepper.

Step 3 – The veggies:

Smash all cloves and chop them finely along with the chilli peppers. Slice the onion and the bok choy.

Heat the wok on high and add the olive oil. In go the garlic and chillies, stir for a few seconds, then add marinated bacon, the onion, bok choy and basil. Cook and toss for 1-2 minutes. Add sauce and the egg noodles. Cook for 2 more minutes and serve hot!

3. Spicy Fried Egg Noodles With Orange Chicken

You will need:

  • 1 cup of all purpose flour
  • 5 tbsp of all purpose flour
  • 1 tsp of salt
  • ½ tsp of black pepper
  • 1 egg
  • ¾ cup of water
  • 500 g of chicken breasts
  • 1 and ½ cups of orange juice
  • 2 tbsp of soy sauce
  • ½ tbsp of brown sugar
  • 1 tsp of red chilli flakes
  • 1 garlic clove
  • 1 tsp of sesame oil
  • 1 package of noodles

How to do it:

Step 1 – The noodles:

Bring a pot with salted water to a boil and cook the noodles on high for 3 minutes, then drain them from the water and set aside.

Step 2 – Frying the chicken:

Cut the chicken breasts. In a dish combine the sifted flour and cornstarch. In another bowl crack the egg and add the water. Heat up the wok with some canola oil and roll the chicken pieces in the flour mix, then drench them in the egg and in the wok they go.

Fry until golden brown, they set them aside to rest.

Step 3 – The orange sauce and assembling:

Clean the wok or get a new pan, heat it up again and add the orange juice, soy sauce brown sugar, stir until the sugar starts to dissolve. Season with the chilli flakes and add the chopped garlic clove and the sesame oil. Toss the fried chicken in for 30-40 seconds.

Finally, add the noodles and stir until everything is combined.
