3 ½ cups all-purpose flour

One teaspoon baking soda

½ teaspoon baking powder

Two sticks butter softened at room temperature

A pinch of salt

1 cup granulated sugar

Two eggs

One teaspoon vanilla extract

Directions

  1. In a bowl, mix flour, baking soda and baking powder.
  2. In the working bowl of a blender or food processor, cream the butter, salt, sugar, eggs and vanilla extract until well blended – smooth and creamy.
  3. Gradually add the dry ingredients into the already creamy mixture and mix on medium speed.
  4. Use the palm of your hands to roll small pieces of dough into balls then in sugar and place them on a cookie sheet. You are not limited to try out different shapes – you can form the dough into small crescents or any other form of your choice. The primary feature is always to maintain the same figure of each cookie. The distance between the cookies should be about 2.5 cm (1 inch) apart to allow space for expansion.
  5. Preheat the oven to 350 degrees-375 degrees Fahrenheit. (180 degrees Celsius-190 degrees Celsius).
  6. Place the rounded doughs on a lightly greased baking tray.
  7. Bake in preheated oven for 8-10 minutes or until the edges are golden brown.
  8. Remove from the baking sheet.
  9. Cool them on a rack.

Two ¼ cups flour spooned and levelled

1 teaspoon baking soda

One teaspoon baking powder

¼ teaspoon salt

½ cup (115 g) softened unsalted butter

½ cup light brown sugar

1 cup creamy peanut butter

Two large eggs

Directions

  1. Preheat oven to 350 degrees Fahrenheit. (180 degrees Celsius).
  2. In a medium-sized bowl, combine flour, baking soda, baking powder and salt. Set aside.
  3. In another bowl, beat butter, brown sugar, vanilla extract and peanut butter until smooth and creamy. Beat in the eggs. Add the flour mixture gradually and keep stirring.
  4. Scoop up a rounded portion of the batter with a teaspoon. With another spoon, push the dough onto the baking sheet and place them at least 5 cm (2 inches) apart.
  5. Bake 10-12 minutes,  while rotating midway through or until centres look set – lightly golden.

240 g (8 oz.) peanut butter

120 g (4 oz.) plain flour

One large egg

Directions

  1. Preheat the oven to 350 degrees Fahrenheit-375 degrees Fahrenheit. (180 degrees Celsius-190 degrees Celsius).
  2. In a bowl, mix peanut butter and egg until it becomes consistent and smooth.
  3. Add the flour slowly and keep mixing.
  4. Scoop up the dough onto a baking tray. It should be in a mound with a peak.
  5. Bake for 8-10 minutes and let the cookies cool completely on a rack.

Tips for Cookie Recipes

  • Prepare cookies the same shape and thickness so that they will bake evenly and be ready at the same time.
  • It is best to place the cookies at least 2.5 cm (1 inch) apart to allow room for expansion. It is because cookies spread out and flatten a little when baked.
